Recipe Ingredients

Damascus red peppers & onion roll-up (you can also use a plain wrap): 1

Chicken tenders, chilled, cut into strips: 2 (approx. 2 oz. each)

Romaine lettuce blend: 1 oz.

Buffalo wing sauce: 1 tablespoon

Blue cheese dressing: 1 & ½ tablespoons

Mayonnaise: 1 tablespoon


Preparation

With an offset spatula, spread the tablespoon of mayonnaise along the top of the short side of the roll-up.

Toss the 1 & ½ tablespoons of blue cheese dressing with the ounce of romaine lettuce blend.

Place tossed romaine lettuce evenly down the center of the roll-up.

Cut chilled chicken tenders into strips.

Toss the sliced chicken tenders with one tablespoon of buffalo wing sauce.

Lay the strips of coated chicken tenders evenly over the tossed romaine lettuce.

Gently fold over the short end of the roll-up, tucking the ingredients in as you roll.

With a chef’s knife, cut the roll-up diagonally in half.

 

Enjoy! (You can also place it in the oven at about 350° for 1 to 2 minutes if you like your sandwich a little crispy).
