Thinly slice eggplant, zucchini, and yellow squash lengthwise. Julienne the peppers, onions, and sweet potatoes. Brush vegetables with olive oil and char grill until done. Transfer all vegetables on roll-ups facing in same direction. Add swiss chard and dressing.
